Blueberry Habanero Goat Cheese Grilled Cheese

Grilled cheese has been one of my favourites since I was a kid. Even now I’ll make it for lunch or dinner if I want something delicious with little effort. The difference is now I use more ‘grown-up’ flavours, rather than just cheddar or mozzarella and white bread.

This grilled cheese uses a couple of my favourites, goat cheese and our Blueberry Habanero Jelly. The goat cheese is little and creamy while the Blueberry Habanero Jelly gives you the sweetness of the blueberries with a nice kick from the habaneros.


Ingredients
2 slices of bread – I used ancient grain
1.5 – 2 oz of softened goat cheese
2 tbsp Wilmot Orchards Blueberry Habanero Jelly
A handful of baby spinach leaves
Butter for bread

Method

Butter one side on each of our slices of bread, these will be our outside sides. On one inside slice, spread your softened goat cheese and top with baby spinach leaves. On the inside side of the second slice of bread, spread the Blueberry Habanero Jelly. Put the two halves together with the buttered sides out. Place first buttered side down in a pan over medium-low heat until the bread is golden brown, then flip to repeat on the second buttered side. Once both sides of your grilled cheese are golden brown, removed grilled cheese from the pan, cut in half and enjoy!
