Blueberry Cheesecake Overnight Oats
These are perfect for a full morning when you need to get out the door quickly. These can be made ahead, for our meal prep lovers, and can keep in the fridge for up to 4 days.
Blending the oats makes it feel like you're eating something between cake batter and cheesecake, but it’s packed with nutrients to start your day off right.
Ingredients
2 cups of rolled oats
1/2 cup milk of choice
1 cup frozen Wilmot Orchards blueberries
1 cup of thick yogurt of choice
2 tsp vanilla extract
1-2 tsp honey or maple syrup (more as desired)
2 tbsp Wilmot Orchards jam of choice (we used Blueberry Lavender, but you could also use Blueberry or Blueberry Orange)
Method
Combine all ingredients, except Wilmot blueberry jam, into a high-powered blender and blend until smooth. Additional milk or water can be added to create a thinner texture if desired (remember the oats will get thicker as they sit in the fridge). Add 1-2 tbsp of Wilmot blueberry jam of choice to the bottom of your container, then top with blueberry oat mixture. Seal with your container’s lid, store in the fridge and enjoy!
