Roasted Blueberries with Burrata

Roasted blueberries over burrata with crusty bread

This may be one of the easiest and most delicious dishes we’ve shared. You can serve it as a large platter as an hors d’oeuvres for your guests, or plated individually as an appetizer; either way, it’ll be a hit!

Ingredients

1-2 Burrata Balls per person
Zest of 1 lemon
2 cups Fresh or Frozen Wilmot Orchards Blueberries
1/4 cup Sliced Shallots
1/4 cup Honey
1 turn of the pan of Balsamic Vinegar
2-3 Springs of Fresh Thyme and Fresh Basil
1 turn of the pan of Extra Virgin Olive Oil
Pinch of Salt
Crusty Bread

Method

Preheat oven to 450°F.

Combine blueberries, shallots, honey, and thyme in an oven-safe pan. Add balsamic vinegar and mix well.

Roast in the oven for 10-15 minutes until the blueberries pop and the mixture becomes slightly jammy.

While the blueberry mixture is cooling, tear and place the burrata balls onto your serving dish. Then scatter the roasted blueberry mixture on and around the burrata. Top with lemon zest, torn basil, a drizzle of olive oil and a pinch of flaky salt. Serve with your favourite crusty bread and enjoy!

Optional: If you’d like a little heat, you can include a pinch of red pepper flakes in the mixture before roasting, and if you’d like an added crunch, you can also top with chopped, roasted pistachios.
